Cookies, cake, and kids

It’s been a while! Life has gotten the best of me lately and I haven’t had much time, or anything interesting to post about, lately.

In a little over the last week, Logan has graduated preschool, turned 5, and started summer school at his new school. Kindergarten will be 3 hours longer than preschool was, so his dad and I decided summer school would be a good way to introduce him to a new school, new staff, and longer hours. If it gets to be too much, we can always cut the day short. Instead of throwing him in to all the changes and having to force him to stay in school all day. He seems to be doing well, though. No meltdowns, enjoying his time in class. He’s even made friends with a girl in his class. It’s only his third day there, and they were both excited to see each other.

As a parent to a child with autism, one of my biggest fears is that he would have a difficult time making friends. It makes me so happy to see him connecting with peers.

Now to the point of the title of the blog post. I wanted to try a recipe I found on Pinterest for marshmallow fondant (here). So I decided to make a Minions inspired cake to match the bike my husband picked out for Logan’s birthday gift. I also made cutout cookies (here) and icing (here) in blue and yellow to spell his name and a bunch of number 5’s. These cookie cutters were one of my favorite purchases. 50 count bucket of cookie cutters, marked down to $4 clearance, and rang up $2!

The cookie recipe made a little over 50 of the cut out cookies. The icing didn’t make quite enough for all of them. Instead of making a whole new batch of icing for only 8 cookies, I just kept the plain ones and let the kids have them for dessert since I made them the day before the party. They were a HUGE hit, and promptly gobbled all up 🙂

I baked a regular 9×13 cake and two 9 inch rounds then carved them and stacked them to make the 5 for his cake. I used a cup to cut out the circle for the bottom.

It wasn’t enough for everyone we invited so I just made some simple chocolate cupcakes and iced them blue and yellow.

I know its not the best fondant job there is. I’m more of a baker than a decorator. But it was a huge hit for my first try! Fondant isn’t everyone’s cup of tea, but I thought it was delicious! I bought some minion gummies to top the cake. And don’t mind the jagged edges of the board. I couldn’t find a box cutter to trim the edges to fit in the box so I had to use scissors.

I’m so grateful our cousin was so gracious to let us use their yard. Ours isn’t quite big enough to host so many people. The kids had a blast at the party playing together, we had a blow up pool, squirt gun wars, and 4 wheeler rides. My uncle even took my grandma for a ride. That was a sight to see!
